This barbecue marinade and baste is adapted from Wild Wes Medley, the US rodeo champion and his book, The Original Cowboy Cookbook
Ingredients
- 225ml strong black coffee
- 225ml Worcestershire sauce
- 225ml ketchup
- 100ml cider vinegar
- 100g brown sugar
- 3 tbsp hot chilli powder (to taste)
- 2 tsp salt
- 225g onion, chopped
- 3 tbsp fresh green chilli, chopped (to taste)
- 6 cloves garlic, chopped
Directions

- Place everything in a pan, bring to the boil and simmer for around 20 minutes. Puree or blend and use to marinade and baste food your barbecue food.
