For this traditional Italian starter use small chunks of ripe melon if fresh figs are unavailable
 

Ingredients

  • 140g prosciutto crudo
  • 140g salami Milano
  • 160g mortadella
  • handful of green olives
  • fresh figs, halved
  • 800g artichoke hearts or 2 x 397g tins
  • 4 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 tbsp chopped parsley
  • 2 tbsp chopped mint
  • pinch salt and freshly ground black pepper
  • grissini (breadsticks) and unsalted butter to serve
Serves: 6 Preparation: 5   Total Time: 5min whats this
 

Directions

  1. Arrange the meats, olives and figs on a serving platter and sprinkle with black pepper.
  2. Combine the artichoke hearts, olive oil, lemon juice and chopped herbs. Season to taste and serve in a separate bowl.
  3. Serve with grissini (breadsticks) and unsalted butter.
