For this traditional Italian starter use small chunks of ripe melon if fresh figs are unavailable
Ingredients
- 140g prosciutto crudo
- 140g salami Milano
- 160g mortadella
- handful of green olives
- fresh figs, halved
- 800g artichoke hearts or 2 x 397g tins
- 4 tbsp olive oil
- 2 tbsp lemon juice
- 2 tbsp chopped parsley
- 2 tbsp chopped mint
- pinch salt and freshly ground black pepper
- grissini (breadsticks) and unsalted butter to serve
Directions

- Arrange the meats, olives and figs on a serving platter and sprinkle with black pepper.
- Combine the artichoke hearts, olive oil, lemon juice and chopped herbs. Season to taste and serve in a separate bowl.
- Serve with grissini (breadsticks) and unsalted butter.
