Asian-spiced fish with mushrooms

Fish is the perfect fast food. This dish uses Asian-style seasoning for a light and delicious meal
Ingredients
- 25g butter
- 4 tbsp soy sauce
- finely grated rind of 1 lime
- 1 mild red chilli, thinly sliced into rings
- four 175g firm white fish fillets, skinned and boned
- 200g pack mixed mushrooms, trimmed
- handful of coriander leaves

- Turn the oven to fan /conventional /gas Melt the butter in a small pan, then stir in the soy sauce, lime rind and chilli. Tip the mixture into a shallow, non-metallic dish and add the fish, turning to coat. Set aside for minutes.
- Drain the fish from the marinade and put on a baking tray. Toss the mushrooms in the remaining marinade and scatter around the fish, drizzling any excess marinade over. Roast for mins, until the fish is tender and the mushrooms are sizzling. Scatter with the coriander.
