Asparagus is a vegetable that all the family can enjoy. Packed with vitamins and minerals and fun to eat, it's great for kids so get them started young. This is a twist on the old favourite
 

Ingredients

  • 2 packets British asparagus tips or two bundles of asparagus, stalks removed
  • 2 tbsp olive oil
  • 2 cloves garlic
  • 2 400g tins chopped plum tomatoes
  • 1 tsp dried mixed herbs
  • 1 tsp sugar
  • 1 vegetable stock cube
  • 50ml water
  • 1 290g pizza base mix
  • 2 150g balls mozzarella, roughly chopped
  • extra virgin olive oil and mixed herbs
  • sea salt & black pepper
Serves: 4 Preparation: 20 Cook Time: 20 Total Time: 40min whats this
 

Directions

  1. Preheat the oven to //Gas mark
  2. Rinse the asparagus tips and pat dry.
  3. Heat the olive oil, chop the garlic finely and add to the oil, cooking for ten seconds, do not brown. Add the tomatoes, herbs, sugar, stock cube, water and seasoning and cook over a medium heat for - minutes or until reduced to a thick sauce.
