Great with summer barbecues or with hummus bread and crudites for a starter or light lunch.
 

Ingredients

  • 1 large ripe avocado
  • 1 tbsp lime or lemon juice
  • 1 tbsp finely chopped spring onion
  • 50g plain cottage cheese
  • few sprigs finely chopped parsley or coriander
  • salt and freshly ground black pepper
  • carrot sticks, celery sticks or savoury biscuits to serve
Serves: 4 Preparation: 30   Total Time: 30min whats this
 

Directions

  1. Halve, stone and peel the avocado then mash in a bowl. Mash in the remaining ingredients and mix well or whizz in a food processor.
  2. Serve with sticks of carrot and celery or savoury biscuits.
