Great with summer barbecues or with hummus bread and crudites for a starter or light lunch.
Ingredients
- 1 large ripe avocado
- 1 tbsp lime or lemon juice
- 1 tbsp finely chopped spring onion
- 50g plain cottage cheese
- few sprigs finely chopped parsley or coriander
- salt and freshly ground black pepper
- carrot sticks, celery sticks or savoury biscuits to serve

- Halve, stone and peel the avocado then mash in a bowl. Mash in the remaining ingredients and mix well or whizz in a food processor.
- Serve with sticks of carrot and celery or savoury biscuits.
