Ingredients
- 2 tbsp cream cheese
- Half tsp snipped chives
- 1 mini baguette
- A few slices cucumber (optional)
- 50g (2 oz) sliced smoked salmon
- Squeeze of lemon juice
- Freshly ground black pepper (optional)

- Mix together the cream cheese and chives, and spread over both sides of the baguette, lay the sliced cucumber (if using) and smoked salmon on top and squeeze over a little lemon juice. Finish with a grind of black pepper (if using) and sandwich, wrap in foil to keep it fresh until lunch time.
