A classic pudding that is well overdue for a revival!
Ingredients
- ? litre strawberry ice cream
- 1 litre pistachio ice cream
- ? Madeira cake
- 2 sachets easy egg white
- 225g caster sugar

- Line a loaf tin with clingfilm. Spread the strawberry ice cream all over the bottom. Freeze for minutes. Spread pistachio ice cream on top. Completely cover the top of the ice cream with thin slices of cake and freeze overnight.
- When ready to serve, preheat the oven to maximum. Make up the egg white to packet instructions then whisk until stiff. Whisk in the sugar a little at a time until the mixture is thick. Transfer to a piping bag fitted with a large star nozzle.
- Unmould the ice cream on to an ovenproof serving dish. Pipe the meringue all over the sides and the top. Cook at the top of the oven for minutes or until tinged golden, or use a blow-torch. Cut into slices and serve at once. Return the rest to the freezer.
