Baked Peaches with Amaretti and Raspberry

Ingredients

  • For the raspberry sauce:
  • 225g raspberries
  • 50g sugar
  • For the peaches:
  • 8 large peaches, halved and stoned
  • 100g Amaretti biscuits
  • 50g butter, melted, plus more for greasing
  • 3 tbsp dark brown sugar
  • 3 tbsp flaked almonds
  • 150ml water
Serves: 6 Preparation: 10 Cook Time: 45 Total Time: 55min whats this
 

Directions

  1. Heat the raspberries and sugar together in a saucepan until just simmering. Cool slightly then pass through a sieve.
  2. Preheat the oven to //gas mark Butter a large ovenproof dish and place the peaches in cut-side up.
  3. Mix together the Amaretti biscuits, butter, sugar and almonds and sprinkle over the peaches.
  4. Pour the water around the peaches and cook for about minutes or until the fruit is tender.
  5. Serve warm with the raspberry sauce and cr&#me fra&#che.
