Banana and Almond Muffins

Perfect with a dollop of crème fraiche and a glass of dessert wine
 

Ingredients

  • 5 bananas, mashed
  • 50ml canola oil
  • 200g honey
  • 1 tsp vanilla essence
  • 270g wholewheat flour
  • ¾ tsp baking powder
  • 100g almonds, chopped
  • ½ tsp salt
  • ¾ tsp ground nutmeg
  • 1 tsp bicarbonate of soda

Directions

  1. Preheat the oven to //gas mark and lightly oil a -cup muffin pan with cooking spray.
  2. Stir together the bananas, oil, honey and vanilla essence.
  3. In another bowl, combine the flour, baking powder, almonds, salt, nutmeg and bicarbonate of soda. Stir the wet ingredients into the dry ingredients and mix well until combined (but don't over mix).
  4. Spoon the mixture into the prepared muffin tin, filling to the rim of each cup. Bake for &# minutes until golden brown. Serve warm with honey.
