How better to use up old bananas than baking them into cookies and drizzling over a warm toffee sauce
Ingredients
- 250g butter (or butter-flavoured shortening)
- 200g white sugar
- 2 eggs
- 1 tsp vanilla extract
- 1 banana, mashed
- 225g flour
- 1 tsp baking soda
- ½ tsp salt
For the sauce:
- 40g butter
- 3 tbsp (25g) icing sugar
- 1 tbsp milk
- 1 tsp

- Preheat the oven to //gas mark and lightly grease a baking tray.
- Cream together the butter or shortening with the sugar until smooth. Beat in the eggs, vanilla and banana.
- Combine the flour, baking soda and salt and blend thoroughly into the butter/shortening mixture to make a sticky batter.
- Drop, one rounded tablespoon at a time, on to the greased baking sheet and bake for minutes or until lightly browned.
- Meanwhile, make the sauce by blending together the butter, icing sugar, milk and vanilla. Add more milk as necessary to attain a drizzling consistency. Warm and drizzle over the cooled cookies.
