- 25g butter
- 2 large bananas, thickly sliced at an angle
- 25g light muscovado sugar
- 2 tbsp dark rum or to taste
- 1 tbsp crème fraîche with a dusting of ground cinnamon (optional) to serve

- Melt the butter in a large frying pan over a medium heat.
- Add the bananas and cook for about minutes, turning the slices once.
- Tip in the sugar and stir until melted and lightly caramelised, then add the rum and allow to bubble. If you wish, carefully ignite with a match or a taper (if using a gas hob).
- Serve when the flames have subsided, with crme frache, dusted with cinnamon if you wish.
