Basic ratatouille

The name ratatouille comes from the French for ‘to stir’, and gives a clue to this healthy dish’s simplicity. By iVillage nutritionist Dr Wynnie Chan
 

Ingredients

  • 1 medium onion, chopped
  • 1 clove garlic, crushed
  • 4 tbsp vegetable oil
  • 420g aubergine, chopped
  • 230g courgette, chopped
  • 135g red pepper, chopped
  • 250g skinned and chopped plum tomatoes
Serves: 4 Preparation: 70   Total Time: 70min whats this
 

Directions

  1. Fry onion and garlic in oil at a low temperature until soft.
  2. Stir in the remaining vegetables and simmer gently for about 20 minutes.
  3. Remove from the heat and serve alone or with rice or cous-cous.
