Basic ratatouille

Ingredients
- 1 medium onion, chopped
- 1 clove garlic, crushed
- 4 tbsp vegetable oil
- 420g aubergine, chopped
- 230g courgette, chopped
- 135g red pepper, chopped
- 250g skinned and chopped plum tomatoes

- Fry onion and garlic in oil at a low temperature until soft.
- Stir in the remaining vegetables and simmer gently for about 20 minutes.
- Remove from the heat and serve alone or with rice or cous-cous.
