Batter

This is the basic mixture of egg, milk and flour for deep-frying everything from cod and onion rings to banana fritters and pineapple
 

Ingredients

  • 50g flour
  • a generous pinch of salt and a little freshly ground black pepper
  • ½ tsp baking powder
  • 1 medium egg
  • 120ml milk

Directions

  1. Mix the flour, seasonings and baking powder in a large bowl.
  2. In a separate bowl or cup, beat the egg until it foams. Add the milk.
  3. Pour the liquids into the dry mixture and beat to combine.
  4. Variations: Depending on what you're cooking, you can add any number of ingredients to the basic batter mix: cumin seeds, powdered ginger, sugar, cinnamon, chopped noodles, garlic, and so on.
  5. Beer batter: For a lighter, crispier (and possibly more healthy) batter, substitute the milk with slightly-flat beer.
