This is a great way to cheat at cooking - use a jar of sauce and some Express Rice! The results are very tasty and it's on the table in less than 20 minutes
Ingredients
- To make the beef and chickpea balti, you will need:
- 2 x Uncle Ben's Basmati Express rice
- 1 x 500g jar Uncle Ben's Balti sauce
- 450g x extra lean minced beef
- 1 x red pepper
- 1 x 400g can of cooked chickpeas
- 150g x frozen garden peas

- Heat a large non stick pan, add a splash of oil and saute the beef, making sure it is broken up and browned all over. Next add the diced pepper and the jar of Uncle Ben's Balti sauce. Cook for minutes stirring frequently. Then drain the chickpeas and take the frozen peas and add both to the pan and continue to cook for a further minutes. Heat the Uncle Ben's Basmati Express rice as per pack instructions, and arrange on plates. Spoon the Balti mixture on top of the rice and serve.
