Beef and Potato Tortilla

Ingredients

  • 500g steak mince
  • 2 cloves garlic, very finely chopped
  • 1 tsp paprika
  • 8 medium eggs
  • 75ml milk
  • 1 tsp dried marjoram
  • 2 tbsp olive oil
  • 450g red-skinned potatoes, sliced paper thin
  • ½ onion, finely chopped
  • 125g Monterey Jack cheese, grated
  • salt and freshly ground black pepper
  • crusty French bread and salad, to serve

Directions

  1. Preheat the oven to //gas mark Heat a large, non-stick frying pan and add the steak mince, garlic and paprika. Stir well to break up the lumps of mince and cook for about minutes until the meat loses its pink colour. Drain off any excess fat from the pan and put the mince to one side.
  2. Place the eggs, milk, marjoram and seasoning in a bowl and whisk well.
  3. Heat the oil in a clean frying pan and cook the potatoes for about minutes until slightly softened. Add the onion and cook the potatoes until golden brown. Add the beef, cheese and egg mixture and stir together. Pour into a large, shallow, lightly oiled ovenproof dish. Cook in the centre of the oven for about minutes until the eggs are set. Remove and allow to cool to room temperature. Serve with crusty French bread and salad.
