Beef with Black Bean Sauce

Ingredients

  • 250g rump steak
  • 1 tsp cornflour
  • 1 tbsp oyster sauce
  • 1 tsp black bean sauce
  • 3 tbsp white wine
  • 1 tsp freshly ground black pepper
  • 1½ tbsp vegetable oil
  • 2 small leeks, thinly sliced

Directions

  1. Slice the steak thinly across the grain and place in a bowl to marinate with the cornflour.
  2. Mix the oyster sauce with the black bean sauce, wine and pepper.
  3. Heat the wok, add the oil and quickly stir-fry the leeks. Remove to a plate. In the same wok, add the steak and stir-fry quickly for 3 minutes until cooked through, then add the sauce mixture. Return the leeks to the wok and stir. Serve at once.
