Beef Rib Steak with Mustard and Shallots

Anyone who has ever enjoyed steak in a brasserie in France will love our version, cooked with shallots and Dijon mustard for a true Gallic taste. Don't forget the frites!
Ingredients
- 25g unsalted butter
- 350g shallots, chopped
- 1 garlic clove, chopped
- 1 tbsp white wine vinegar
- 1 tbsp Dijon mustard
- 1 tbsp fresh coriander, chopped
- 24 cherry tomatoes
- 2-3 tbsp vegetable oil
- 4 beef rib steaks, weighing about 225g each
- salt and ground black pepper

- Heat the butter in a saucepan, add the shallots and cook over a low heat for minutes until softened. Add the garlic and cook slowly for minutes, taking care not to let it burn.
- Add the vinegar and cook for minutes until reduced to a dry consistency, then stir in the mustard and coriander and season to taste.
- Place the tomatoes in a roasting tin. Drizzle with some of the oil and cook in the oven for minutes at //gas mark
- Brush the steaks with oil and grill for minutes, turning regularly until cooked. Divide the onion mixture among the steaks, spreading it over the top of each one. Serve with the roasted cherry tomatoes.
