Bonfire Gingercake

A piece of spicy gingercake is a lovely Guy Fawkes Night treat, delicious eaten with a glass of hot punch. You could decorate the top with stars made from silver paper or with white icing and silver balls
Ingredients
- 100g butter, plus extra for greasing
- 100g dark brown sugar
- 100g sultanas
- 8 tbsp treacle
- 1 tsp ground ginger
- 2 eggs
- 200g plain flour
- ½ tsp bicarbonate of soda
- 500ml milk
- a few whole, blanched almonds (optional)

- Preheat the oven to //gas mark
- Grease a cm cake tin.
- Cream together the butter and sugar until soft.
- Stir in the sultanas, treacle and ginger.
- Mix in the eggs one at a time with about half of the flour.
- Add the remaining flour, the bicarbonate of soda and the milk.
- Turn into the cake tin and cook for minutes or until a skewer or knife comes out clean. (If you want to add almonds, scatter them over the top about two-thirds of the way through the cooking time.)
