Ingredients
- Beef brisket joint
- Ale with honey
- Oil
- Shallots or onion
- Garlic
- Brown sugar
- Soy sauce
- Star anise
- Shitake mushrooms
- Oyster mushrooms

- Heat the oven to gas mark ,
- Place (b) lean beef brisket joint cut into large chunks ( in a large bowl and pour over l (?pt) ale with honey. Cover and leave in the fridge for about mins.
- In a large, ovenproof pan or casserole dish heat ml (bsp) oil, add whole shallots, peeled, or large onion cut into wedges and cloves garlic, squashed. Cook until lightly browned. Add ml (bsp) brown sugar, ml (bsp) soy sauce and star anise. Stir until onions caramelise (be careful not to burn the sugar) and remove from pan and reserve.
- Drain the meat, (& reserve the liquid) add to pan and brown. Return onions etc, plus a further ml (tbsp) brown sugar and ale to pan. Bring to boil, cover and place in oven for hours or until the meat is tender. During last minutes of cooking time, add g (z) shitake mushrooms and g (z) oyster mushrooms, cut into thick slices.
