The traditional Irish breakfast is a hearty affair comprising Boxty pancakes, sausages, bacon, mushroom, tomato and eggs. There's an old Irish rhyme which goes 'Boxty on the griddle, Boxty on the pan, if you can't make Boxty, you'll never get a man'
Ingredients
- 300g/10oz potatoes, peeled
- 125 g/4 oz plain flour
- 1/2 teaspoon bicarbonate of soda
- Salt and freshly ground black pepper
- About 200ml/7 fl oz buttermilk or milk
- Butter and oil, for frying

- Cut half of the potatoes into chunks and boil them until tender. Drain well and mash them.
- Coarsely grate the rest of the potato and add to the mash with the flour and bicarbonate of soda. Mix well, adding enough buttermilk or milk to make a thick batter.
- Heat a griddle or frying pan, grease it with butter and add a little oil and allow a large spoonful of mixture for each pancake, cooking or at a time over moderate heat for a few minutes on each side.
