Ingredients
- For the salad:
- 175g peas
- 2 courgettes
- ½ cucumber
- 8 asparagus
- 2 spring onions
- 8 little gem leaves
- For the dressing:
- 6 radishes
- 1 tbsp chopped chives
- 1 tsp grain mustard
- Juice of 1 lemon

- Cut courgettes into dice and blanche for minutes with peas, refresh and drain.
- Cook asparagus and trim m from tops, chop stems keeping tips apart.
- Cut spring onions into cm length, add asparagus stalks, peas and courgettes.
- Cut cucumber into dice and mix in.
- Shred half of the leaves and put aside.
- Cut radishes into fine dice and put into a bowl.
- Add mustard and juice of lemon, mix well.
- Stir in oils then chives and season.
- Add some dressing without radish to vegetable mixture.
- . Lay shredded lettuce into leaves.
- . Spoon mixture on top.
- . Garnish with spears of asparagus on each.
