Brie-topped Mediterranean Burgers

Ingredients

  • 500g lean minced beef
  • 3 tbsp red pesto or sun dried tomato sauce
  • 1 small red onion, very finely chopped
  • 1 clove garlic, crushed
  • 4 brie Slices
  • 4 burger baps or ciabatta rolls
  • 2 tomatoes, sliced

Directions

  1. In a bowl, mix together the minced beef, red pesto, onion, garlic and seasoning.
  2. Divide into four and shape into burgers. Chill for minutes
  3. Brush the burgers with a little oil. Cook on the BBQ or a preheated griddle pan for minutes on each side. Toss the rocket leaves in the French dressing.
  4. Meanwhile cut the bread baps in half and place on the BBQ to toast. Lift the burgers onto the bread bases; add slices of tomato then Brie to each then return under the grill for minutes until the Brie is just beginning to melt. Serve with dressed rocket leaves or watercress.
