Broccoli and Sesame Fritters with Dipping Sauce

Give broccoli an oriental dimension with these light fritters and a dipping sauce made with hoisin sauce, soy sauce and ginger
Ingredients
- For the dipping sauce:
- 6 tbsp hoisin sauce
- 2 tbsp dry sherry
- 2 tbsp light soy sauce
- 1.5cm piece root ginger, peeled and very finely chopped
- 1 tsp lemon juice
For the batter:
- 300ml lager
- 225g self-raising flour
- 1 tsp lemon juice
- 450g broccoli
- 1 tbsp oil for deep frying
- 2 tbsp sesame seeds

- First make the dipping sauce. Combine all of the ingredients and mix well. This can be made up to days in advance. It's actually better if made day in advance and stored in the fridge.
- Next make the batter. Whisk the lager into the flour then add the lemon juice and salt and pepper to taste. Leave to stand for minutes. Meanwhile, cut the broccoli into florets approximately m/n in size, avoiding any large pieces of stalk.
- Heat the oil to in a deep fat fryer. Whisk the sesame seeds into the batter, then add between and pieces of broccoli at a time. Stir to coat the broccoli, then carefully remove and add to the hot oil.
- Deep fry the pieces until golden brown, turning once or twice with a slotted spoon. Drain on kitchen paper and keep warm. Repeat until all of the broccoli has been cooked.
- Transfer the fritters to a heated serving dish, and pour the dipping sauce into a separate dish before serving straight away.
