- 500g or 2 heads broccoli florets and stalk cut into bite-sized pieces
- 2 tbsp extra virgin olive oil
- 1 tsp lemon juice
- salt and freshly ground black pepper
- For the batter:
- 125g plain flour
- ½ tsp dried crushed chillies
- 1 medium free-range egg, separated
- 150ml lager
- 2 tbsp fresh coriander, chopped
- 4 spring onions, finely sliced
- groundnut or sunflower oil for deep frying
- ½ tsp cream of tartar

- Boil the broccoli for minutes. Drain well, place in a bowl and toss with the oil and lemon juice. Season and set aside.
- To make the batter, sift the flour into a bowl, season, then stir in the chillies. Make a well in the centre and add the egg yolk with half the lager. Whisk to mix, then whisk in the remaining lager. Stir in coriander and spring onions.
- Heat the oil until a cube of bread browns in seconds. Whisk the egg white and cream of tartar in a bowl until stiff. Fold into the batter. Dip the broccoli florets in batter and fry for minutes until crisp.
- Drain on kitchen paper. Serve while still hot with chilli and coriander mayonnaise and lime wedges.
