Ingredients

  • 500g or 2 heads broccoli florets and stalk cut into bite-sized pieces
  • 2 tbsp extra virgin olive oil
  • 1 tsp lemon juice
  • salt and freshly ground black pepper
  • For the batter:
  • 125g plain flour
  • ½ tsp dried crushed chillies
  • 1 medium free-range egg, separated
  • 150ml lager
  • 2 tbsp fresh coriander, chopped
  • 4 spring onions, finely sliced
  • groundnut or sunflower oil for deep frying
  • ½ tsp cream of tartar

Directions

  1. Boil the broccoli for minutes. Drain well, place in a bowl and toss with the oil and lemon juice. Season and set aside.
  2. To make the batter, sift the flour into a bowl, season, then stir in the chillies. Make a well in the centre and add the egg yolk with half the lager. Whisk to mix, then whisk in the remaining lager. Stir in coriander and spring onions.
  3. Heat the oil until a cube of bread browns in seconds. Whisk the egg white and cream of tartar in a bowl until stiff. Fold into the batter. Dip the broccoli florets in batter and fry for minutes until crisp.
  4. Drain on kitchen paper. Serve while still hot with chilli and coriander mayonnaise and lime wedges.
