Boost your fibre intake with Dr Wynnie Chan’s savoury rice salad
 

Ingredients

  • 720g brown rice
  • 240g spring onions, chopped
  • 90g canned sweetcorn
  • 60g cashew nuts
  • 60g raisins
  • 1½ tbsp soy sauce
  • 3 tbsp olive oil
  • 80g red pepper, chopped
Serves: 4 Preparation: 30   Total Time: 30min whats this
 

Directions

  1. Cook the rice according to packet instructions.
  2. Mix all the other ingredients with the cooked rice in a large bowl and enjoy.
