A healthy salad that doesn't break the bank and is a great way of using leftover salad ingredients.
Ingredients
- 1 packet bulgur wheat
- 110g cucumber, quartered, seeded and diced
- 85g sun-dried tomatoes packed in oil, drained and chopped
- handful of olives, chopped
- 3 tbsp fresh mint, finely chopped
- 1 tbsp olive oil

- Prepare the bulgur wheat according to directions on the pack. Once it is ready, add other ingredients and mix until well blended.
- This salad can be taken to work in a sealed plastic container and eaten as is or used as a filling for a pitta-bread sandwich. Take the pitta bread separately and assemble the sandwich when ready to eat.
