Bulgur Salad

A healthy salad that doesn't break the bank and is a great way of using leftover salad ingredients.
 

Ingredients

  • 1 packet bulgur wheat
  • 110g cucumber, quartered, seeded and diced
  • 85g sun-dried tomatoes packed in oil, drained and chopped
  • handful of olives, chopped
  • 3 tbsp fresh mint, finely chopped
  • 1 tbsp olive oil
Serves: 4 Preparation: 20   Total Time: 20min whats this
 

Directions

  1. Prepare the bulgur wheat according to directions on the pack. Once it is ready, add other ingredients and mix until well blended.
  2. This salad can be taken to work in a sealed plastic container and eaten as is or used as a filling for a pitta-bread sandwich. Take the pitta bread separately and assemble the sandwich when ready to eat.
