Butternut Mash with Onion and Bacon

Ingredients

  • 2 medium butternut squashes, each about 750g
  • 25g butter
  • 1 small onion, finely chopped
  • 4 strips lean streaky bacon, smoked or unsmoked
  • freshly ground black pepper

Directions

  1. Peel and chop the squash into approximately m chunks. Place in a steamer fitted over simmering water and cook until tender, about - minutes. They should be soft but not falling apart.
  2. While the squash is steaming, heat the butter in a small saucepan and fry the onion over a gentle heat, covering the pan with a lid, for about minutes. The onion should cook slowly (this is called &#sweating&#) so it becomes soft and sweet but not coloured. Add the chopped bacon and turn up the heat a little so the bacon cooks.
  3. When the squash is ready, transfer to a bowl and mash with a potato masher. If you like a creamier mash, use an electric mixer. Season with freshly ground black pepper and fold in the onion and bacon. This is excellent served with game birds or chicken.
