Cajun Meat Loaf

This is a classic American dish. Serve with good old tomato ketchup.
Ingredients
- 1 large onion, finely chopped
- 2 large celery sticks, finely chopped
- 1 green pepper, de-seeded and finely chopped
- 3 tbsp vegetable oil
- 2 cloves of garlic
- 1 tsp each dried oregano and thyme
- 2 tsp salt
- 2 tsp chilli powder
- 1 tsp freshly ground black pepper
- 1 tsp ground cumin
- ? tsp ground nutmeg
- butter for greasing
- 750g fresh beef mince
- 250g pork mince or pork sausages, skinned
- 75g dried natural breadcrumbs
- 2 large eggs, beaten
- 170g evaporated milk
- 220g chopped tomatoes
- baked sweet potatoes and a green vegetable or side salad, to serve

- Take a large frying pan and cook the onion, celery and pepper in the oil over a medium heat for minutes. Add the garlic and cook for minutes until softened without being browned.
- Combine all the herbs, spices and seasoning and add to the pan about minute before the end of cooking time. Leave to cool.
- Preheat the oven to //gas mark Butter a litre/ pint ovenproof loaf dish or tin. Place all the remaining ingredients in a large bowl and mix well, then add the cooled vegetable mixture and stir thoroughly. Transfer to the dish or tin and level the surface.
- Cook towards the top of the oven for about hour until a skewer inserted into the centre of the loaf for the count of is hot to the touch when carefully tested on the back of your wrist. Remove the tin from the oven, rest for minutes, then pour off any liquid and unmould. Serve in thick slices with baked potatoes (try sweet ones for a change) and a green vegetable or side salad.
