Cajun Turkey Burgers

Ingredients

  • 3 spring onions
  • 2 cloves garlic, peeled
  • 450g turkey mince
  • 1 tsp dried thyme or oregano
  • 2 tsp Cajun seasoning, to taste
  • finely grated zest of 1 lime
  • 750g sweet potatoes
  • oil, for shallow frying
  • salt and freshly grated ground black pepper

Directions

  1. Trim and roughly chop the spring onions. Roughly slice the garlic. Put the turkey mince in a food processor with the spring onions, garlic, thyme or oregano, Cajun seasoning, lime zest and salt and pepper. Blend briefly until mixed.
  2. Divide the mixture into four, and shape each piece into a flat burger. Peel the sweet potatoes and cut into small chips.
  3. Heat a thin layer of oil in a large frying pan. Add the potatoes and fry gently, turning frequently, for about minutes until golden. Drain on kitchen paper and keep warm while frying the burgers.
  4. Add burgers to the pan and fry for minutes on each side until cooked through. Drain and serve with the chips.
