Cajun Turkey Burgers

- 3 spring onions
- 2 cloves garlic, peeled
- 450g turkey mince
- 1 tsp dried thyme or oregano
- 2 tsp Cajun seasoning, to taste
- finely grated zest of 1 lime
- 750g sweet potatoes
- oil, for shallow frying
- salt and freshly grated ground black pepper

- Trim and roughly chop the spring onions. Roughly slice the garlic. Put the turkey mince in a food processor with the spring onions, garlic, thyme or oregano, Cajun seasoning, lime zest and salt and pepper. Blend briefly until mixed.
- Divide the mixture into four, and shape each piece into a flat burger. Peel the sweet potatoes and cut into small chips.
- Heat a thin layer of oil in a large frying pan. Add the potatoes and fry gently, turning frequently, for about minutes until golden. Drain on kitchen paper and keep warm while frying the burgers.
- Add burgers to the pan and fry for minutes on each side until cooked through. Drain and serve with the chips.
