Caramelised bananas with vanilla sponge and Greek yoghurt

A naughty but nice dessert
 

Ingredients

  • 4 bananas (skinned and sliced in half)
  • 100g caster sugar
  • 1 vanilla pod split lengthways and scrape out the seeds (optional)
  • 50g butter
  • 4 vanilla sponge slices
  • 4 tbsp Greek yoghurt

Directions

  1. Heat sugar over a moderate heat in a large frying pan, stirring gently with a wooden spoon until sugar caramelises. Remove from the heat and stir in the butter, vanilla seeds and pod and tbsp of cold water
  2. Add the bananas cut side down, and return to the heat, cook for minutes and then turn over. The bananas should have taken on the caramel colour.
  3. Place the slices of vanilla sponge in the middle of the plates, pile halves of bananas on top and pour over the caramel sauce. Using a warm spoon, scoop out Greek yoghurt and place on top.
