Caramelised Sweet Potatoes with Vanilla

This rich glaze is perfect for other sweet root vegetables such as carrots, parsnips and pumpkin. You can serve these root veg with chicken, turkey or pork.
Ingredients
- 2 medium sweet potatoes, weighing about 350g
- 40g caster sugar
- 40g light muscovado sugar
- 40g butter
- ¼ unwaxed orange, thinly sliced with skin left on
- ¼ unwaxed lemon, thinly sliced with skin left on
- 1 vanilla pod, split
- 1 cinnamon stick, broken in half
- salt

- Wash the potatoes, place in a saucepan and cover with cold water. Bring to the boil, cover and simmer for minutes.
- Meanwhile, place all the remaining ingredients in a large, wide pan.
- Drain the potatoes, reserving l of the cooking water. Cool the potatoes under cold running water, then peel. Cut each potato into quarters lengthways, and then into four. Add to the ingredients in the pan together with the reserved water. Bring to the boil, reduce the heat, cover and simmer for - minutes or until just tender.
- Remove the lid and increase the heat to maximum. Cook, stirring frequently, for minutes until the liquid has reduced to a syrupy glaze.
