- 454g (1lb) Lean pork cubes (leg, shoulder, loin or fillet)
- 30ml (2tbsp) White wine vinegar
- 30ml (2tbsp) Soy sauce
- 2.5ml (1/2tsp)Ground ginger
- 2.5ml (1/2tsp)Ground allspice
- 2 cloves Garlic
- 300ml (1/2pt) Mango and apple fruit juice (or similar)
- 15ml (1tbsp) Sweet chilli sauce
- 1 Red chilli, deseeded and finely chopped
- 1 Onion, finely chopped

- Place lean pork cubes, white wine vinegar, soy sauce, ground ginger, ground allspice, garlic, crushed, mango and apple fruit juice, sweet chilli sauce, red chilli, and onion into a large ovenproof casserole
- Place in a preheated oven for hour. After hour remove the lid and cook for a further minutes to thicken the sauce slightly.
