You've heard of four-cheese pizza? well here's a three-cheese tart, a delicious way to use up the remains of the cheeseboard and perfect for lunch over the holidays. Add any cheese you like, but a mix of something blue, something creamy and a mature cheddar works well. I've included a pastry recipe in case you've got lots of butter to eat up, too - but you can always use a pack of readymade shortcrust instead
Ingredients
- FOR THE PASTRY
- 250g/9oz plain flour, plus extra for rolling
- 125g/4 1/2 oz butter, cold and cubed
- 1/2 tsp salt
- FOR THE FILLING
- 2 onions, sliced into rings
- 1 tbsp oil
- 2 eggs
- 284ml pot double cream

- Put the flour, butter and salt into the bowl of a food processor, then pulse until the mix looks like fine crumbs. Splash in tbsp cold water, then pulse to a dough. Turn onto a lightly floured surface, shape into a smooth disc, then wrap and chill for at least mins. Heat oven to /fan /gas
- Roll pastry out on a floured surface until large enough to line a cm loose-bottomed tart tin. Line the tin with the pastry, leaving any excess pastry overhanging. Line with baking paper, then fill with baking beans. Bake on a baking sheet for mins. Take out the paper and beans, then bake for mins more until pale golden and cooked.
