Chicken and Mushroom Stir-fry

Serve with noodles for a filling main course
 

Ingredients

  • 350g mixed white or brown mushrooms

  • 125g pack of mixed exotic mushrooms
  • 2 tbsp groundnut oil
  • 2 cloves garlic, chopped
  • 275g chicken breast, cut into strips
  • 1 red pepper, de-seeded and sliced
  • 1 bunch spring onions, sliced
  • 2.5cm piece of fresh root ginger, peeled and grated
  • 2 tbsp soy sauce
  • 2 tsp clear honey
  • 1 tbsp tomato sauce
Serves: 4 Preparation: 30   Total Time: 30min whats this
 

Directions

  1. Slice the larger mushroom. Heat the oil in a wok and stir-fry the garlic for 30 seconds.
  2. Add the chicken and stir-fry for 5 minutes
  3. Add the pepper, onions, ginger and sliced mushrooms and stir-fry for 5 minutes.
  4. Stir in the whole mushrooms, soy sauce, honey and tomato sauce and stir-fry for a further 5 minutes. If you like, serve with cooked noodles.
