Chicken and Mushroom Stir-fry

Serve with noodles for a filling main course
Ingredients
350g mixed white or brown mushrooms
- 125g pack of mixed exotic mushrooms
- 2 tbsp groundnut oil
- 2 cloves garlic, chopped
- 275g chicken breast, cut into strips
- 1 red pepper, de-seeded and sliced
- 1 bunch spring onions, sliced
- 2.5cm piece of fresh root ginger, peeled and grated
- 2 tbsp soy sauce
- 2 tsp clear honey
- 1 tbsp tomato sauce

- Slice the larger mushroom. Heat the oil in a wok and stir-fry the garlic for 30 seconds.
- Add the chicken and stir-fry for 5 minutes
- Add the pepper, onions, ginger and sliced mushrooms and stir-fry for 5 minutes.
- Stir in the whole mushrooms, soy sauce, honey and tomato sauce and stir-fry for a further 5 minutes. If you like, serve with cooked noodles.
