Chicken in Peach Sauce

Ingredients

  • 4 chicken portions
  • 2 tbsp vegetable oil
  • 1 small onion, chopped
  • 1 clove garlic, crushed
  • ½ red pepper
  • 300ml chicken stock
  • juice of 1 lemon
  • 4 peaches, peeled, stoned and chopped
Serves: 4 Preparation: 90   Total Time: 90min whats this
 

Directions

  1. Preheat oven to //gas mark Heat oil in a frying pan and fry chicken portions until brown. Remove from pan and place in a large casserole dish.
  2. Add onion, garlic and pepper to the pan and fry until soft.
  3. Pour in the stock and bring to the boil.
  4. Remove from the heat and stir in lemon juice and peaches.
  5. Add to casserole dish and bake for about hour until the chicken is thoroughly cooked. Serve with plain boiled rice.
