Ingredients
- 4 chicken portions
- 2 tbsp vegetable oil
- 1 small onion, chopped
- 1 clove garlic, crushed
- ½ red pepper
- 300ml chicken stock
- juice of 1 lemon
- 4 peaches, peeled, stoned and chopped

- Preheat oven to //gas mark Heat oil in a frying pan and fry chicken portions until brown. Remove from pan and place in a large casserole dish.
- Add onion, garlic and pepper to the pan and fry until soft.
- Pour in the stock and bring to the boil.
- Remove from the heat and stir in lemon juice and peaches.
- Add to casserole dish and bake for about hour until the chicken is thoroughly cooked. Serve with plain boiled rice.
