Chicken pilaf

Cooking for one doesn't have to mean eating something on toast. This great rice dish is quick and easy to make and can easily be multiplied if you want to feed more
 

Ingredients

  • 1 tsp sunflower oil
  • 1 small onion, chopped
  • 1 large or 2 small skinless chicken thigh fillets, cut into chunks
  • 2 tsp curry paste
  • one third of a mug basmati rice
  • two thirds of a mug chicken stock
  • 1 mug frozen vegetables
  • 1/2 mug frozen leaf spinach
Serves: 1 Preparation: 25   Total Time: 25min whats this
 

Directions

  1. Heat the oil in a frying pan, then fry the onion for minutes, until soft. Add the chicken pieces, fry for a further couple of minutes just to colour the outside, then stir in curry paste and rice. Cook for another minute.
