Ingredients
- 2 chicken breasts
- 600ml (1 pint) chicken stock
- 100g (4 oz) pasta bows, cooked and cooled
- 100g (4oz) canned or frozen sweet corn
- 18 small cherry tomatoes cut in half
- 2 spring onions, finely sliced
- Half baby gem lettuce, shredded
- Dressing:
- 3 tbsp olive oil
- 1 tbsp white wine vinegar
- Half tsp Dijon mustard (optional) half tsp sugar

- Poach the chicken in the stock for about minutes, then leave to cool completely. Remove the chicken with a slotted spoon and cut into bite-sized pieces (this can be prepared the night before).
- To make the dressing, whisk together all the ingredients. Combine the rest of the ingredients for the salad with the chicken and toss in the dressing.
