- 2 tbsp olive oil
- 1 green chilli, deseeded and chopped
- 1 large red onion, diced
- 3 cloves garlic, finely chopped
- 2 tbsp tarragon vinegar
- 2 x 400g cans chickpeas, drained

Heat the oil in a frying pan and fry the chilli, onion and garlic for mins until softened. Add the vinegar and continue to cook until the liquid is reduced by half.
Put the chickpeas and tomatoes in a large bowl and pour over the onion mixture. Add the chopped herbs and mix well. Gently mix in the spinach and serve.
