Chilled macaronia 'Greek Pasta' with yoghurt curry sauce

This curried pasta dish uses yoghurt for freshness.

Ingredients

  • 800g cooked linguini pasta or similar
  • 500g Total 0 percent Greek Yoghurt
  • 4 tbsp curry powder
  • 2 red peppers
  • 1 diced mango
  • 4 crushed cloves of garlic
  • Dry chilli flakes
  • Chopped coriander
  • Salt and pepper
  • Chopped chives

Directions

  1. Brush the red pepper with oil and grill until black, then place in a plastic bag and seal which will loosen the skin with steam. When cool, skin and dice
  2. Mix the curry powder, mango, garlic, chilli, coriander, chives, red pepper and Total Greek Yoghurt
  3. Add pasta and seasoning. Refrigerate then serve.
  4. Chef's tip: For a hot dish, why not warm the yoghurt up, add the rest of the ingredients and serve over hot pasta
