- Preheat the oven to 180C/350F/gas mark 4. Lightly grease and line the base of 2.4 litre/4 pint heatproof pudding basin/bowl.
- Blend the cocoa powder with 4 tablespoons of hot water until smooth.
- Place the butter, sugar, eggs, flour and baking powder in a large mixing bowl and beat with a wooden spoon or electric mixer until smooth. Add the cocoa powder and beat until well blended.
- Place the cake mixture into the heatproof pudding bowl. Level the mixture then push a slight dip into the centre. Bake in the middle of the oven for about 55 minutes or until springy to the touch and a skewer inserted into the centre of the cake comes out clean.
- Allow to cool in the bowl for 5 minutes before turning out onto wire racks to cool completely.
- Next make the butter icing:
- Melt the chocolate in a bowl over a pan over gently simmering water. Do not allow the water to touch the bottom of the bowl or allow any water to get in to the chocolate. Allow to cool slightly.
- Sift the icing sugar and cocoa powder together.
- Beat the butter until fluffy then gradually mix in the icing sugar mixture. Finally beat in the melted chocolate.
- Trim the edges of the cake to make it slightly oval. Place it on a plate and use some of the trimmings to form a pointed snout at one end using a little butter icing to stick the pieces in place. Don't worry about the shape too much at this point.
- Spread the remaining icing all over the cake and using a palate knife spread the icing to shape the face and snout of the hedgehog. Flatten the eye area and use a fork to give texture over the top of the snout and the back of the hedgehog, dragging the fork teeth gently from front to back. Cut the Flakes in half and arrange as the spines of the hedgehog. Use chocolate buttons for the eyes and a cherry for the nose. Takes about 45-55 minuted to cook
