- Penne 200g
- Chorizo 150g, sliced
- Garlic 1 clove, finely sliced
- SunBlush tomatoes 10, chopped (find them in Sainsbury's)
- Red wine 1 glass
- Flat-leaf parsley a small handful, chopped

- Cook the pasta according to pack instructions. Meanwhile, cook the chorizo for minutes in a non-stick pan. Add the garlic and tomato and season. Cook for a couple more minutes then add the wine. Simmer gently for minutes then stir through the parsley and pasta.

- Pasta is a classic low-Gi food. Watch the portion size as too much will cause a faster rise in blood glucose - so divide this between three and serve it with salad.
- Recipe extra
- Add a tin of chopped tomatoes instead of the sunblush tomatoes if you'd like more sauce and serve with parmesan.
