Chorizo and SunBlush tomato penne

Ingredients

  • Penne 200g
  • Chorizo 150g, sliced
  • Garlic 1 clove, finely sliced
  • SunBlush tomatoes 10, chopped (find them in Sainsbury's)
  • Red wine 1 glass
  • Flat-leaf parsley a small handful, chopped
Serves: 2   Cook Time: 15 Total Time: 15min whats this
 

Directions

  1. Cook the pasta according to pack instructions. Meanwhile, cook the chorizo for minutes in a non-stick pan. Add the garlic and tomato and season. Cook for a couple more minutes then add the wine. Simmer gently for minutes then stir through the parsley and pasta.
  2. GI assessment
  3. Pasta is a classic low-Gi food. Watch the portion size as too much will cause a faster rise in blood glucose - so divide this between three and serve it with salad.
  4. Recipe extra
  5. Add a tin of chopped tomatoes instead of the sunblush tomatoes if you'd like more sauce and serve with parmesan.
