Coconut chicken with cucumber

This simple cucumber salad is equally delicious with prawns
Ingredients
- 2 egg whites, lightly beaten
- 4 skinless chicken breasts
- 6 tbsp desiccated coconut
- 2 tsp sunflower oil
- 1 cucumber
- 2 small red onions,
- thinly sliced
- 4 tsp caster sugar
- 4 tbsp white wine vinegar (or rice vinegar)

- Turn the oven to fan /conventional /gas Season the egg white. Dip the chicken in the egg, then in the coconut. Place on a lightly oiled baking sheet and bake for minutes, turning once, or until cooked through.
