Cod loin with a herb crust

A deliciously healthy and easy-to-make supper dish
 

Ingredients

  • 4 x cod loin fillets, skinned
  • oil for light greasing
  • 125g fresh white bread crumbs
  • grated zest and juice of 1 lemon
  • 4 tbsp chopped flat-leaf parsley
  • 2 tbsp chopped chives
  • 2 tbsp mayonnaise
  • 1 tspn Dijon mustard
  • salt and black pepper
Serves: 4 Preparation: 10 Cook Time: 20 Total Time: 30min whats this
 

Directions

  1. Preheat the oven to / gas mark and lightly grease a shallow baking dish. Lay the cod in the dish.
  2. In a small bowl, toss together the breadcrumbs, lemon zest, juice and herbs.
