Cooking a little taste of India
I had a great day on Tuesday with a fabulous chef I know called Bala – he has a great Indian restaurant in Soho called Carom. For a long time now I've wanted to master Indian cooking because I enjoy the food so much, so I asked him to teach me a few things... There is so so much to learn. It's not so much about the spices but all the different ovens they use, how they cook something. It's great.
We started with Chennai chicken which is a recipe his mum used to make back home.
My god – it was spicy but absolutely delicious.
They change a lot of their traditional dishes for our pallets over here and it's the same with this one. At home they'd use red onions for instance but here, white.

The food at Carom is absolutely gorgeous and Bala's experience with all foods is second to none with him having worked in major western cuisine restaurants all over London before starting the resturant.
I suggest you pop down and try the Chennai chicken with a bit of naan and have a little giggle picturing me nearly burning myself on the tandoor oven.
The cocktails here are a must too...
