- ½ honeydew melon, seeded
- 1 ruby grapefruit or pomelo
- 4 kiwi fruit
- 425g can lychees, drained with the syrup reserved
- 4 tbsp lemon grass cordial with ginger

- Peel the melon and cut into bite-sized pieces. Using a small, sharp knife (ideally serrated), cut away the peel and pith from the grapefruit or pomelo and cut into quarters, then thinly slice each piece. Peel and slice the kiwi fruit, then halve the lychees or leave them whole.
- Combine all the fruit in a serving bowl with the cordial and mix well.
