Ingredients

  • 1 tbsp olive oil

  • 12 vegetarian sausages
  • 3 chopped onions
  • 3 deseeded and chopped red peppers
  • 3x420g cans of red kidney beans

Directions

  1. Preheat the oven to //Gas mark Meanwhile, heat tbsp of the oilve oil in a large frying pan and brown the vegetarian sausages and set aside.

  2. Add another tbsp of olive oil and fry the chopped onions and peppers until soft. Drain the cans of kidney beans and add them to the onion and pepper mixture.

  3. Comine the honey with the vinegar and mustard powder in a large bowl and add the jar of tomato pasta sauce. Season well and mix in the beans, peppers and onion mixture. Tip half into an ovenproof dish, arrange the sausages on top, then cover with the remainder. Cook for about mins or until piping hot and a crust is beginning to form on the top. Serve with salad or a cooked green vegetable.
