Cranberry and Mincemeat Tart

This wonderful tart combines three of our most popular Christmas flavours - cranberries, marzipan and mincemeat - in one dish. And the cranberries give the tart a gleaming, jewel-like quality.
Ingredients
- 350g fresh cranberries
- 25g caster sugar, plus ½ tbsp for sprinkling
- 410g mincemeat
- 125g white marzipan
For the pastry:
- 225g plain flour
- 125g butter, diced
- 25g icing sugar
- 1 large egg, separated
- 2 tbsp milk, orange juice or cold water

- Place the cranberries in a pan with tbsp water. Simmer until the berries just start to pop. Mix in g sugar, leave to cool, then stir in the mincemeat.
- For the pastry, sift the flour into a bowl then rub in the butter until the mixture resembles fine crumbs. Stir in the icing sugar and bind together with the egg yolk and milk, orange juice or water to give a firm dough.
- Preheat the oven to //gas mark On a lightly floured surface, roll out the pastry to a cm/in round. Set it in the centre of a large baking tray.
- Spoon the filling into the centre of the pastry, then fold in the edges to make a border about m around the tart, leaving the filling visible in the cetnre. Brush the pastry with the lightly whisked egg white and chill in the fridge while you make the stars.
- Roll out the marzipan thinly and stamp out as many small stars as possible, re-rolling if necessary. Brush the pastry again with egg white and press the stars all over the tart. Brush the tops with egg white then sprinkle with the reserved sugar.
- Cook in the centre of the oven for minutes, covering with foil if necessary (the tart should be well browned). Serve warm or cold with custard, cream or ice cream.
