Cucumber, Dill and Horseradish Relish

A delicious accompaniment to most fish dishes. Serve with Frances Bissell's Trio of Potted Smoked Fish
Ingredients
- 1 cucumber
- 1 tsp sea salt
- 4 spring onions
- 1 tbsp fresh dill, trimmed and chopped
- 1 tbsp horseradish, grated
- freshly ground black pepper
- 4 tbsp good-quality mayonnaise
