Denise Van Outens Sausages in Cider with Lemon Thyme

A comforting winter warmer. Denise recommends that you buy good-quality sausages made from outdoor-reared pigs, and serve them with some comforting mashed potato
Ingredients
- 12 sausages, about 800g
- 1½ tbsp sunflower oil
- 1 medium onion, half of it chopped finely, the other half sliced
- 1 clove garlic, crushed and chopped
- 1 tbsp flour
- 225ml dry cider or perry
- ½ tbsp sunflower oil
- 3 Granny Smith apples, peeled, cored, cut into quarters and sliced thickly
- 1 tbsp fresh lemon thyme, chopped
- 200ml apple juice
- sea salt and freshly ground pepper

- Fry the sausages in tbsp of the oil on a low to medium heat until light brown.
- Remove the sausages from the pan. Add another tbsp of oil along with the chopped and sliced onion and fry lightly until soft. Stir in the garlic, then the flour, and leave to cook for a couple of minutes.
- Add the cider or perry gradually and continue to stir over a low heat, brining it to a simmer.
- Meanwhile, heat the remaining tbsp of oil in a separate pan and fry the sliced apple, which will caramelise quite quickly. Add the apple to the pan of cider, along with the sausages, chopped thyme and apple juice.
- Season, cover with a lid and simmer gently for hour, by which time the apples and onions will have become meltingly soft. The aroma will be divine.
- Check the seasoning and serve with another comfort food such as mash.
