These are so easy to make, you'll want to add them to your repertoire: larger ones for casseroles and smaller ones for dishes such as oxtail soup and, in game season, game soups and casseroles

Ingredients

  • 100g flour
  • 75g soft breadcrumbs
  • 50g finely grated suet
  • 1 tbsp finely chopped parsley
  • ? tsp fresh thyme
  • ? tsp fresh chives
  • ? tsp salt
  • ? tsp baking powder
  • freshly ground black pepper
  • water, milk or lightly beaten egg to bind
Serves: 6 Preparation: 5 Cook Time: 40 Total Time: 45min whats this

Directions

  1. Combine all the dry ingredients in a bowl, including the suet, herbs and seasoning, then mix in enough liquid to bind the mixture to a dough. Shape into slightly flattened balls.
  2. Place the dumplings on top of casseroles or in soups. Allow them to cook in the dish for ? minutes before serving.
