These are so easy to make, you'll want to add them to your repertoire: larger ones for casseroles and smaller ones for dishes such as oxtail soup and, in game season, game soups and casseroles
Ingredients
- 100g flour
- 75g soft breadcrumbs
- 50g finely grated suet
- 1 tbsp finely chopped parsley
- ? tsp fresh thyme
- ? tsp fresh chives
- ? tsp salt
- ? tsp baking powder
- freshly ground black pepper
- water, milk or lightly beaten egg to bind

- Combine all the dry ingredients in a bowl, including the suet, herbs and seasoning, then mix in enough liquid to bind the mixture to a dough. Shape into slightly flattened balls.
Place the dumplings on top of casseroles or in soups. Allow them to cook in the dish for ? minutes before serving.
